VeganMoFo: Carrots and Weigh In Wednesday

I weighed in this morning at 164.5 pounds.  That’s down 1.2 pounds from last week but still .9 pounds higher than two weeks ago, so I’m still working on it!

Now, carrots.  Everyone has heard about how eating carrots helps your vision, right?  It’s true – The beta-carotene in carrots protects against macular degeneration and promotes good vision, especially night vision.  Carrots are also a good source of vitamins K, C and B6, biotin, potassium and thiamine.  The antioxidants in carrots help protect against cardiovascular disease and cancer.

Orange carrots are most popular, but carrots also come in red, purple, white and yellow.  Carrots are selectively bred for different colors, and for sweetness.

Let’s talk about baby carrots for a second.  In case you didn’t know, baby-cut carrots are the cast off or lesser quality carrots, just cut down into bite-sized pieces.  I used to buy baby carrots for convenience back in college, and found more often than not that they were dry and flavorless, or sticky and smelly.  My advice?  Skip the baby-cut carrots, buy some nice, organic, whole carrots and cut them into sticks yourself!

Carrots are best when prepared simply.  Roast them, lightly steam then, or just eat them raw.  I add a shredded or sliced carrot to almost every salad I eat.  If you want to get creative, cook some carrots and other root veggies such as parsnips, turnips, celeriac or potato, then mash them all together with some seasonings and maybe a drizzle of truffle oil.

Most carrot salads are mixed up with mayonnaise; this one uses a really tasty balsamic vinaigrette instead.  This Lemony Carrot Salad sounds really tasty too.

    I had no idea that baby carrots were the leftovers — that makes sense, though, now that I think about it. I think I’ll start cutting up my own carrot sticks (probably cheaper, too).
